HOW TO PREPARE KULI-KULI A NIGERIAN SNACK(with health benefits)

 Kuli-Kuli is a Northern Nigerian snack that is made from dry roasted peanuts/groundnuts , ground into a semi-paste, mixed with select spices and deep fried until it hardens.

* 1 Cup dry roasted groundnuts / Peanuts
* half tablespoonful Grated Ginger
*A pinch of ground Chilli pepper(optional)
*Groundnut /Peanut oil , for frying

DIRECTIONS

    ** Grind or Pound the roasted  groundnuts and ginger until smooth. You can make use of a dry mill or mortar. You can also add a little oil to the mill/blender as you grind. Don't allow it to turn completely to paste.

     ** Next, squeeze the groundnut paste to remove as much oil as possible(this step is very important if you want a very crunchy kulikuli).The secret in getting the crunchiest kuli kuli is squeezing out as much oil out of the paste,as you can get out.

    ** Mold the paste into any shape of choice.I prefer the circular shape..(you can add a little water to help it mold easily).

  ** Now heat about 4 cm deep of peanut/groundnut oil in a frying pan or pot, until the oil begins to smoke. You can add a few slices of onion or cloves to the oil to give it some extra flavor.

  ** Add the molded groundnut paste to the oil and fry until golden brown

TIP: If your Kuli kuli turned out softer than expected, pop itinto a preheated oven to dry out and harden without burning it.
